How to make the perfect acorn squash

My mom suggested trying an acorn squash a while back and I was like, “what’s an acorn squash?” HA!

I’m not going to lie, I would see them in the grocery store and just think they were one of those festive gourds you see during the fall time.

Despite my hesitation at first, I gave it a try and… I’m hooked! I will actually sit down at night and eat an acorn squash instead of my normal “sweets” and I have no clue why because they’re really not similar. Seriously though, they are so satisfying.

You can cook these with brown sugar to make them sweet but I don’t think anything beats this simple butter and salt recipe. Acorn squashes are the perfect side or snack!

Step 1: Preheat your oven to 400 degrees.

Step 2: Wash your squash.

Step 3: Cut your squash in half. They are strong so you’ve got to put some muscle into it!

Step 4: Hallow out the halves, removing all of the seeds and most of the strings.

Step 5: Place the halves face down on a cookie sheet and add a small amount of water to surround the halves

Step 7: Bake for 45 minutes. Larger squashes may require a few more minutes but 45 usually does it for me!

Step 8: Remove from oven, flip squashes over (hallow side up) and put 1 TBS of butter in each half

Step 9: Return to oven and Broil for 3 minutes

Step 10: Remove from oven, salt to taste and enjoy! (You can scoop the squash out of their skins if you desire)

There is also a microwave option where you do the exact same thing (cut it in half, hallow, place face down with a little water) but you only have to microwave it for 8 minutes. Yes, this is the faster option and tastes really good too, but I like to avoid the microwave as much as possible. Either are delish though so do as you please!

Chicken Pot Pie Recipe


I wanted to share this super simple chicken pot pie recipe because if you’re in a cold climate like me, sometimes you just crave comfort food.

What you will need:

  1. 1 can of cream of potato, cream of mushroom OR cream of celery soup
  2. 1 12-16oz bag of frozen veggies (carrots, corn & beans mix)
  3. 1 top and bottom pie crust
  4. 1 large chicken breast (I prefer to use two small)
  5. Salt and pepper


  1. Cook the chicken however you’d like. We cut up the breasts into small cubes and use a skillet on the stove to cook ours.
  2. Mix soup, chicken, vegetables (frozen is fine) and seasoning.
  3. Put bottom pie crust in 9 inch baking dish. We prefer to use a glass dish.
  4. Add the mixture to the bottom crust.
  5. Top with top pie crust and pinch around the edges. trim excess crust around the edges.
  6. Cut a little design or a few slits on the top to vent.

Bake at 425 degrees for 30-40 minutes until heated through and browned on top – That’s it!!

Easy Peasy Apple Cider (crockpot recipe)

The fall feels are in full swing in our home! The decorations are up and it actually snowed today. It’s safe to say that the warm weather is gone until next year.

When I think of fall I think of fall scents, apples, cinnamon, and a warm cozy home. This apple cider recipe accomplishes all of that and more. Even better, it can be made in your crockpot! Easy peasy!

The perfect summer salad recipe

My mom stopped by the other day with this amazing salad that she made and I had to run out the next day and buy ingredients to make it for myself!

SO EASY & SO GOOD. I actually mean it when I say easy too because I know a lot of recipes say “easy to prepare” and they’re straight up lying. I also mean it when I say it’s good, like really good. My toddler is becoming picky but she ate an entire bowl for dinner but it could easily be eaten as a dip!


1 can of corn
1 can of black beans
1 can of artichokes
A chopped red onion
Halved cherry tomatoes
2 cut up avocados
1 can of sliced black olives
Feta cheese
Balsamic vinaigrette
Salt & pepper
Garlic salt

Simple – mix it up in a bowl and season to taste!
