MLK Jr Smiling When my kiddos were really young, they attributed his serious face as someone who was “mean.” I had to explain that he was serious and passionate about the topic at hand. I think this is a great photo to show your children. It’s just so beautiful!

Black Bean Brownie Recipe

I know what you’re thinking…. “UM, WHAT?”

I thought the same thing, trust me. I had to try them for myself. I baked them and then fed them to my family without disclosing the fact that they were made from beans. Do you know what happened? Everyone loved them.

Trust me! I’ve shared this recipe in the past on my Instagram. My followers tried them and got back to me and they only had great things to say! The original recipe is from one of my favorites, Chocolate Covered Katie. I’ve made the directions a little more concise below so you don’t have to scroll and scroll to get to the recipe.

Ingredients

  • 1 1/2 cups black beans (1 15-oz can, drained and rinsed well)
  • 2 tbsp cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/3 cup maple syrup, honey, or agave
  • pinch uncut stevia OR 2 tbsp sugar
  • 1/4 cup coconut or vegetable oil
  • 2 tsp pure vanilla extract (homemade vanilla recipe)
  • 1/2 tsp baking powder
  • 1/2 cup to 2/3 cup chocolate chips (Not optional, these are a must)

Instructions

  • Preheat oven to 350 degrees F
  • Combine all ingredients except chocolate chips in a good food processor, and blend until completely smooth. Blend well.
  • Stir in the chips, then pour into a greased 8×8 pan.
  • Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! *Makes 9-12 brownies*

Vegetarian Three Cheese White Bean Buffalo Dip

The original recipe is from the Ambition Kitchen. I’ve made this recipe many times and we love it. I’ve made their instructions a little more concise below. Enjoy!

Ingredients

The base-

  • 1 15oz can of white beans, drained and rinsed well
  • 4oz cream cheese
  • 1/2 cup of plain whole milk Greek yogurt
  • 2/3 cup medium or hot buffalo sauce

The mix ins-

  • 1 15oz can of white beans, drained and rinsed well
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup sharp cheddar cheese
  • 1/4 cup diced green onion

The garnish-

  • Fresh cilantro and or extra green onion
  • Extra cheese

For serving-

  • Pretzels, carrot sticks, celery, chips, pita chips

Instructions

Step 1-

  • Preheat oven to 375 degrees
  • Grease a 9 inch oven safe skillet or a 8×8 inch dish with nonstick cooking spray. Set aside.

Step 2-

  • In the bowl of a food processor, add 1 can of white beans, cream cheese, Greek yogurt and Buffalo sauce
  • Blend until smooth
  • Pour it into prepared skillet or dish

Step 3-

  • Gently stir remaining can of white beans, 1/4 cup mozzarella, 1/4 cup cheddar cheese and green onion. Spread evenly.
  • Top with extra shredded cheese green onion garnish. Bake 25-30min until cheese is bubbling and slightly golden brown along the edges. (I always put it under the broiler for a few minutes).

The Bug Bite Thing

One of THE most irritating things about summer in our neck of the woods is the dreaded mosquitos. We have a lovely sliver of spring when they haven’t hatched out of hiding yet, and it’s simply glorious. When they do come out though, they arise with a vengeance.

Nothing is worse than being eaten alive… and then to deal with the itchiness afterwards is the literal definition of “UGH!”

I learned something new the other day. The reason we feel itchy is due to a reaction caused by the saliva/venom the bugs leave behind just under our skin.

Book Review: The Creative Family Manifesto by Amanda Blake Soule

The Creative Family Manifesto by Amanda Blake Soule

My ⭐️ rating: 3.5/5

The Creative Family Manifesto was a very easy read. Amanda shared her thoughts and views on living a creative family life. Personally, we already do a lot of the things she talks about in this book but I think it would be a great read for someone who is looking to deepen their relationship with their kids and create a family-centered fun home environment.

The four things she focuses on are—

1. Self- developing or continuing our own passions and interests

2. Child- the development and nurturing of their spirit

3. Family- the deepening of the family bond through creating together

4. Community- how we can connect to both our local and global communities through the act of creative living

I kind of felt like I was reading a long blog post at times. Things get slightly repetitive in spots and I don’t think it was laid out in the absolute best way but she touches on a lot of great ideas. Again, I probably would’ve enjoyed it much more if I didn’t already share a lot of these views/so many of these things already.

I did end up saving some ideas to my notes that I’d love to try and also be more mindful of. Some of those things are—

⁃ A Silly Gratitude Alphabet

⁃ Thanking our elders, my children and myself often

⁃ Having a vinyl tablecloth ready for the dining table so we can have messy play more often

⁃ Games: Don’t smile, family charades, the endless story, what’s in the bag?

⁃ Family drawing time where we all try to draw the item in the center of the table

⁃ Make a small hand sewing basket for the kids

⁃ Garden stories

⁃ Seasonal nature table

⁃ A treasure of for each child to keep their special belongings in

⁃ Mealtime gathering and blessings

⁃ Birthday blessings

⁃ DIY coloring books

⁃ Family art night with extended family

If you’re looking for ways to deepen your family connection, slow down a little and enjoy time together, this book is an easy read and has many fun ideas to try!

No Bake Energy Balls

Everyone loves these in our house! They’re fun and easy to make and not too bad for you!

Ingredients:

-2 cup rolled oats or old fashioned oats (I use Better Oats)

-1/2 cup honey, maple syrup, or agave syrup -1 cup peanut butter or almond butter (I use Agave in the Raw)

-1/2 cup chocolate chips

-1 pinch of sea salt (optional)

-2 teaspoons vanilla extract (I use this homemade recipe)

-1/2 cup unsweetened coconut (optional: toasted first)

-4 tablespoons ground flaxseed (I used Super Seeds because I had them on hand)

Instructions:

Combine all of the ingredients (sometimes melting the peanut butter a little helps), mix well, chill the mix in the fridge for 20 minutes or so, then roll them up into balls with your hands!

You can add different kinds of chocolate chips, cinnamon, raisins etc. They always turn out so good. I store mine in an airtight container in the fridge. YUM!

3 Ingredient No-Bake Cereal Bars, So Yummy!

The easiest no-bake cereal bars ever! Only 3 ingredients!! I’m going to get straight to the point…

Ingredients:

– 4c of cereal (I used Cascadian Farms Purely O’s)

– 3/4c of peanut butter (almond or sunflower work fine)

– 3/4c of syrup (I used Agave in the Raw but maple works well too)

Instructions:

Measure out the cereal in a bowl and set aside. Combine the syrup and peanut butter together in a separate bowl. Melt it on the stove or in the microwave, stir well. Pour it over your cereal and mix until well blended. Pour it into a dish lined with parchment paper, pack lightly and refrigerate for at least 30 minutes to set up. So easy and so yummy!
